JOB SUMMARY
The Stewarding Manager is responsible for overseeing the cleanliness, sanitation, and organization of all F&B back-of-house areas, in alignment with HACCP standards and Estate Yountville’s luxury service expectations. This role supports the culinary and service teams by ensuring all F&B operating equipment, silverware, glassware, and china are properly maintained, inventoried, and readily available. The position plays a key role in sustainability, equipment care, cost control, and daily operations support for all events, outlets, and culinary functions.
ESSENTIAL JOB RESPONSIBILITIES
- Supervise all stewarding activities and ensure the highest standards of hygiene and cleanliness in accordance with health and safety regulations and HACCP protocols
- Receive and inspect all incoming food deliveries, cleaning supplies, and chemicals; ensure items are stored properly using the FIFO (First In, First Out) method
- Oversee proper usage, handling, and storage of all cleaning chemicals and sanitation supplies
- Attend BEO meetings
- Coordinate with Executive Chef and F&B leaders daily to understand operational needs, upcoming events, and ensure adequate support across all areas
- Coordinate all equipment and supply needs for daily F&B operations, banquets, catering, restaurant service, bar setups, and events
- Manage and support event setups, breakdowns, and post-event cleanups, ensuring timely turnaround and cleanliness of all BOH and service areas
- Ensure all kitchen equipment, dishwashing machines, and stewarding tools are well-maintained, functional, and properly serviced in coordination with the Engineering team
- Manage and reduce breakage and loss of silverware, china, and glassware; maintain accurate inventory and par stock levels
- Conduct daily walkthroughs and collaborate with Engineering to proactively address maintenance needs and prevent equipment downtime
- Support execution of catering and special events, ensuring stewarding coverage and equipment are aligned with operational timelines
- Develop and implement cleaning schedules for all F&B and service areas, ensuring procedures are followed consistently and standards are upheld
- Maintain records of equipment usage, breakage, and replacement needs; participate in the annual budgeting process for stewarding OPEX and smallware purchasing
- Process and monitor purchase orders, receiving, storing, and issuing of cleaning and operating supplies
- Implement a recycling and waste management program in compliance with local environmental regulations and Estate Yountville’s sustainability standards
- Supervise and schedule stewarding team members, including any third-party support; ensure team members are trained on health and safety best practices
- Provide timely payroll and HR data, including scheduling, attendance tracking, and performance management
- Communicate professionally with internal departments and external vendors, maintaining supplier contracts and service agreements
- Support onboarding and ongoing training efforts to uphold performance standards and guest satisfaction goals
REQUIRED QUALIFICATIONS
- Minimum high school diploma; further education or certifications in hospitality, food safety, or operations preferred.
- Strong verbal and written communication skills in English; bilingual skills a plus.
- Previous experience in stewarding or F&B operations, preferably in a luxury hotel or resort setting.
- Proven leadership and team development skills.
- Knowledge of HACCP, food safety regulations, and best practices in cleaning and sanitation.
- Experience with maintenance coordination and basic knowledge of kitchen and dishwashing equipment functionality.
- Ability to work in a fast-paced, high-volume environment with a commitment to excellence and detail.
- Strong organizational skills, adaptability, and a service-driven mindset.
